Peanut Butter Cookies


I've had a hankering for these for ages now, if there's one thing I really love it's peanut butter in things, fried sandwiches with banana, kitkats, brownies, cheesecakes. After seeing Niall Harbison on the Late Late Show on Friday, I decided to put Look and taste to the test. There was a recipe for peanut butter cookies, good start, and I had all the ingredients, even better. 

Being able to cook, it meant I just let Niall ramble on in the background while I got on with the cookies. But it's a great site and so easy to follow instructions. My cookie dough was not as gooey, so the cookies were more crumbly, but yummy and perfect to be taken to a pals house as a bribe to hang around for dinner after. 

You can take these to the next level by adding lots of chocolate chips or by coating them with melted chocolate. We just wolfed them down warm with glasses of ice cold milk. 

  • 80g Butter
  • 180g Light Brown Sugar or Demarara Sugar
  • 60g Dried Coconut Powder
  • 8 tbsp Peanut Butter
  • 2 Eggs
  • 150g Self Raising Flour
    1. Place the sugar into the mixing bowl with the butter and whisk on a medium speed for 2 minutes until light and smooth;
    2. Add the desiccated coconut to the mixture and mix again for a further 1 minute;
    3. When the mixture is smooth add the peanut butter to the mixing bowl and mix for a further 30 seconds;
    4. Turn the mixer to a very slow speed and add the eggs to the mixture. Mix for a further 30 seconds until the eggs have been totally incorporated;
    5. Remove the mixture from the mixer and fold the flour into the mixture using a spatula until the mixture is totally smooth;
    6. Place some baking parchment or greaseproof paper on an oven tray and shape the mixture into cookie size shapes using 2 spoons making sure to separate them on the tray as they will expand slightly;
    7. Place the cookies in the oven at 180C/360F for 12/15 minutes;
    8. Remove the cookies from the oven and place on a wire rack to cool down;
