I've had a hankering for these for ages now, if there's one thing I really love it's peanut butter in things, fried sandwiches with banana, kitkats, brownies, cheesecakes. After seeing Niall Harbison on the Late Late Show on Friday, I decided to put Look and taste to the test. There was a recipe for peanut butter cookies, good start, and I had all the ingredients, even better.
- 80g Butter
- 180g Light Brown Sugar or Demarara Sugar
- 60g Dried Coconut Powder
- 8 tbsp Peanut Butter
- 2 Eggs
- 150g Self Raising Flour

- Place the sugar into the mixing bowl with the butter and whisk on a medium speed for 2 minutes until light and smooth;
- Add the desiccated coconut to the mixture and mix again for a further 1 minute;
- When the mixture is smooth add the peanut butter to the mixing bowl and mix for a further 30 seconds;
- Turn the mixer to a very slow speed and add the eggs to the mixture. Mix for a further 30 seconds until the eggs have been totally incorporated;
- Remove the mixture from the mixer and fold the flour into the mixture using a spatula until the mixture is totally smooth;
- Place some baking parchment or greaseproof paper on an oven tray and shape the mixture into cookie size shapes using 2 spoons making sure to separate them on the tray as they will expand slightly;
- Place the cookies in the oven at 180C/360F for 12/15 minutes;
- Remove the cookies from the oven and place on a wire rack to cool down;
these look really good, i might just have to try them out. Must say yours look better than the flat ones on the original site!
