Beetroot hummus

Beetroot hummus is way too easy and looks incredible while tasting totally yummy

To make it you will need

1 tin cooked chick peas, drained and rinsed

1 large/ 2 small cooked beets, cook them in water for about 30 mins till tender

1 clove garlic, peeled and roughly chopped

50ml olive oil

2 tblsp tahini

juice of 1/2 to 1 full lemon, depends on size and how you like it

Salt n pepper

Method

Zap everything in a blender until it's all combined, taste the seasoning, marvel at the mad pinkiness of the colour, spoon  it out, drizzle over more olive oil and devour with crusty bread, or carrot sticks are great too

P.S the chefs in the kitchen at No.1 made me look good by putting this gorgeous slate of goodies together for the lunch, so I shouldn't take all the credit, but I will!!
